Toasted Sesame Orzo

Ingredients

1 tablespoon sesame seeds

2/3 cup uncooked whole-grain orzo pasta

1 teaspoon reduced-fat soft tub margarine or vegetable oil

1½ cups fresh spinach, coarsely chopped

1 clove garlic, minced

3 tablespoons fat-free milk or soy milk

2 tablespoons grated Parmesan cheese

½ teaspoon dried oregano leaves

½ teaspoon paprika

¼ teaspoon black pepper

Directions

  1. Place sesame seeds in small skillet. Cook over medium heat until golden brown, stirring constantly. Set aside.
  2. Cook pasta according to package direction, omitting salt. Drain and set aside.
  3. Melt margarine or heat oil in medium skillet. Add spinach and garlic; cook over medium heat until spinach is wilted.
  4. Stir in cooked pasta, milk, cheese, oregano, paprika and pepper. Cook over low heat until heated through. Sprinkle with sesame seeds just before serving. Makes 5 servings.
