Mediterranean Penne with Tuna

Ingredients

6 ounces uncooked whole grain penne pasta

1 cup chopped red bell pepper

½ cup chopped onion

2 medium garlic cloves, minced

1 teaspoon dried oregano

12 pitted kalamata olive, coarsely chopped

1 tablespoon olive oil

1 (3-ounce) albacore tuna, rinsed and drained

½ cup crumbled feta-cheese

Directions

  1. Cook pasta according to package directions, omitting any salt or fat.
  2. Meanwhile coat large nonstick skillet with nonstick cooking spray and heat over medium-high heat. Cook pepper and onion 5-7 minutes or until onion is translucent stirring frequently. Add garlic and oregano; cook 30 seconds, stirring constantly. Remove from heat; add olive and oil.
  3. Place pasta on serving platter. Top with tuna Spoon vegetables evenly over all and sprinkle evenly with feta cheese. Makes 4 servings.
