Ingredients
½ cup firmly packed light brown sugar
¼ cup no-trans-fat soft margarine
¼ cup natural applesauce
¼ cup egg substitute
1 teaspoon vanilla extract
1 cup uncooked quick-cooking oats
½ cup all-purpose flour
1 teaspoon baking powder
1 (8-ounce) block reduced-fat softened cream cheese
¼ cup all-fruit strawberry spread
fresh kiwi slices, fresh berries and drained mandarin orange slices
Directions
Preheat oven to 350 degrees. Coat a large baking sheet with cooking spray. Set aside.
Crust: In medium bowl, whisk together brown sugar, margarine, applesauce, egg substitute and vanilla extract. With a wooden spoon stir in oats, flour, and baking powder. The dough will be soft and moist. Do not over mix.
Transfer the dough to the baking sheet. Use a spatula to spread the dough into a 12-inch circle about ¼ -inch thick. Bake for 12-14 minutes or until golden brown. Place baking sheet on a wire rack to cook for 30 minutes.
In medium bowl beat cream cheese and strawberry spread with electric mixer. Use a spatula to spread the cream cheese mixture evenly over the cookie crust. Arrange over the pizza top fresh kiwi slices, fresh berries, and mandarin orange slices. Cut into 12 wedges.
