White Bean and Orzo Salad

  • Cook ¾ cup uncooked dry whole-grain orzo pasta according to package directions, omitting the salt.
  • In mixing bowl stir together 1 (15.5-ounce) can drained navy beans, ½ cup chopped roasted red bell peppers, 3 tablespoons drained and rinsed capers, 3 tablespoons chopped fresh basil, 1 cup packed coarsely chopped fresh baby spinach leaves, 2 tablespoons balsamic vinegar and 1 tablespoon olive oil.
  • Drain orzo and add to the bean mixture. Toss gently to combine.
  • Makes 6 servings.
