Oh-So-Pretty 6-Bean Salad

  • Trim, clean and dry 2 Romaine lettuce hearts. Set aside 10 leaves. Thinly slice the remaining lettuce leaves. Place in large mixing bowl.
  • To the lettuce in the mixing bowl add beans and dressing: 1 rinsed can lima beans, 1 rinsed can pinto beans 1 rinsed can dark red kidney beans, 1 rinsed can garbanzo beans, 1 rinsed can black beans, 1 rinsed can black-eye peas and ½ cup desired Italian dressing. Toss gently to mix.
  • In 10 stemmed glasses, place a Romaine lettuce leaf upright. Spoon 1 cup of the bean salad into each glass. Makes 10 servings.
