Chicken-Fruit Salad

  • Preheat oven to 300 degrees. Spread ½ cup pecan pieces on baking sheet and toast in preheated oven for 5-10 minutes. Remove from oven and set aside; cool to room temperature.
  • In large glass serving bowl, toss together 1 cup red seedless grapes, 1 peeled, cored and sliced kiwi, 1 cored and sliced pear, 1 cup cubed boneless, skinless chicken breast and 10 cups mixed salad greens.
  • Toss with homemade honey mustard dressing. Top with the tossed pecans.
  • Makes 4 main-dish salads
