French Toast Sticks

  • In mixing bowl whisk together 1 cup liquid egg substitute, 1/3 cup nonfat or soy milk, 1 teaspoon ground cinnamon and 1 teaspoon vanilla extract. Cut unsliced homemade whole-grain bread into 4 x 1 x 1-inch sticks to total at least 12 sticks.
  • Heat a nonstick griddle or skillet. Coat with cooking spray. Dip bread sticks in the egg mixture to coat. Place on skillet. Cook until golden brown. Flip and cook the other side.
  • To serve: Dust lightly with Confectioners’ sugar, and drizzle with maple syrup. Use diet maple syrup if you have diabetes. Also consider serving with warmed-up berries. Makes 4 servings
