Grilled/Baked Fish Tacos

Heat oven to 375 degrees (or fire up the grill).

  • Place 1 lb. of halibut or tilapia fillets on baking sheet coated with cooking spray.
  • Spoon ¼ cup salsa evenly over the fish.
  • Bake for 8-10 minutes or until the fish is flakey.
  • In mixing bowl stir together 2 cups packaged coleslaw mix, ¼ cup salsa, ¼ cup reduced-fat sour cream and 2 tablespoons cilantro.
  • Slice fish into thin slices. Fill 8 warmed taco shells with the fish, and then top with cabbage mixture.

Makes 4 servings.
