Homemade Chicken Pizza

  • Coat a nonstick skillet with cooking spray.  Add 1 boneless chicken breast cut into thin strips.  Cook for a few minutes, turning occasionally. Add 1 small sliced red onion, 1 small sliced red bell pepper and 1 small sliced green bell pepper. Stir all together.
  • Spread ½ cup mango or peach chutney evenly over a large whole wheat pizza crust. Top with the chicken-veggie mixture, evenly spread over the crust. Top with 1 (8-ounce) can drained pineapple tidbits.
  • Sprinkle the top with 1 cup reduced-fat shredded mozzarella cheese. Bake in oven for 12 minutes.

Makes 4 servings.
