Gingerbread Bars

Preheat oven to 350 degrees. Coat a 13×9-inch baking pan with cooking spray.

  • In a large bowl beat 6 tablespoons no-trans-fat tub margarine until creamy. Add 1 cup firmly packed brown sugar and beat until light. Beat in 2 large egg whites. Add ¼ cup molasses and beat until smooth.
  • In another bowl whisk together 1 1/3 cups all-purpose flour, 1 cup whole-wheat flour, ¾ teaspoon baking powder, ¾ teaspoon baking soda, ¾ teaspoon ground ginger, ½ teaspoon ground cinnamon, ½ teaspoon ground nutmeg, and 1/8 teaspoon ground cloves. Add dry ingredients to the margarine mixture and blend. Stir in ½ cup coarsely chopped walnuts. The dough will be sticky.
  • Place the dough in the center of the baking pan. Using a spatula or wet hands, spread the dough evenly in pan. Place pan on center rack of oven and bake for 25 minutes. Allow to cool for 5 minutes. Cut into small bars. Store in airtight container.

Makes 30 bars.
