- In medium saucepan bring 3½ cups water and ½ cup chopped dried apricots to a boil. Cover and reduce heat; simmer for about 5 minutes.
- Stir in 2 cups uncooked quick-cooking rolled oats. Cook uncovered for 1-2 minutes or until thickened. Stir occasionally. Spoon into bowls.
- Add a dollop of fat-free vanilla yogurt on top. Using a knife, swirl the yogurt through the oatmeal.
