- Pick through 1 lb. dry black beans to remove any bad beans. Soak overnight in cold water to cover Drain and rinse.
- In a large pot place the beans in 7 cups water, along with 1 medium chopped green pepper, 1½ cups chopped onion, 1 tablespoon vegetable oil, 2 bay leaves, 1 minced garlic clove, and ½ teaspoon salt. Cover and bring to a boil. Reduce heat and simmer for 3-4 hours, or until tender. Add more water if needed. These can be cooked overnight in a crockpot.
- Remove one-third of the beans and mash; return to the pot. Remove bay leaves, and stir in 1 tablespoon vinegar or lemon juice. Serve over brown or wild rice.
