Corn Bake made with Soy Milk


Preheat oven to 375 degrees. Coat an 8-inch square pan with cooking spray.

  • In a nonstick skillet heat 2 teaspoons olive oil Add ½ cup sliced green onions and ½ finely diced red bell peppers. Cook for a few minutes or until soft. Turn off heat of burner and stir in 1 (7-ounce) can drained and chopped green chilies and 1 cup frozen corn kernels.
  • In a mixing bowl beat together 2 large eggs, 2 egg whites,1½ cups plain soy milk and ¼ teaspoon black pepper. In a small bowl toss together with a fork 1 cup grated reduced-fat Jack cheese and 2 Tbsp. flour.
  •  To the egg-milk mixture, stir in the onion-pepper mixture, as well as the cheese. Pour into baking dish and bake until puffy and a knife inserted in the center comes out clean, about 30 minutes. Let sit at room temperature for 10 minutes before serving.

Makes 6 servings.
