- For each wrap: lay 1 (8-inch) whole-grain flour tortilla on cutting board. Top with the following ingredients in the center – 2-3 baby spinach leaves, 1-2 small tomato slices, sliced mushrooms, red pepper strips or roasted red pepper strips, 1 Tbsp. fat-free feta cheese crumbles, drizzle of olive oil, and finally sprinkle with black pepper, dried basil leaves and dried rosemary.
- Roll up and then wrap the edges under the roll. Place on microwave plate and microwave for 20 seconds on HIGH. If making several rolls, place in pan and bake at 325 degrees for a few minutes to slightly steam the vegetables and melt the cheese. Serve warm.
