Apple-Yogurt Pie


Preheat oven to 350 degrees.

  • In a mixing bowl stir together ¼ cup frozen (thawed) apple juice concentrate, 1¼ cups Grapenuts cereal and 1 tbsp. ground cinnamon. Press mixture into the bottom and up the sides of a 9-inch pie plate. Bake for 5 minutes; remove and cool.
  • Filling: In a small bowl stir 1 envelope (1 Tbsp.) unflavored gelatin into 1/3 cup cold water. Let stand for a few minutes.
  • Pour ½ cup frozen (thawed) apple juice concentrate into saucepan. Heat to boiling. Add the gelatin-water mixture and stir to dissolve, In another mixing bowl whisk together 2¼ cups nonfat plain yogurt, ¼ cup honey, ½ teaspoon ground cinnamon, 1/8 teaspoon nutmeg, and ½ teaspoon almond extract. Add the gelatin-juice mixture to the yogurt mixture. Whisk together until thoroughly blended. Pour into the crust; refrigerate overnight.

Makes 8 servings.
