Almond Rice Pudding


  • In a saucepan stir together 1 cup water and ½ cup brown rice. Bring to a boil, reduce heat, cover and simmer for 15 minutes until the water is absorbed. Stir in 2 cups vanilla soy milk and ¼ cup maple syrup, stirring until the rice is thick – about 30 minutes.
  • Remove from heat and stir in ½ teaspoon vanilla extract, 1 teaspoon cinnamon and ¼ cup dried raisins or dried blueberries.

Makes 4 servings.
