Blackberry Bars with Blackberry Sauce

Preheat oven to 350 degrees.

  • In bowl stir together 1 cup all-purpose flour (half can be whole wheat) and ¾ cup packed brown sugar. Cut in ¼ cup no-trans-fat soft margarine, and press into an 8-inch square baking dish.
  • In a bowl stir together ½ cup reduced-fat sour cream, ¼ cup egg substitute, ¾ teaspoon baking soda, 1 teaspoon ground cinnamon, dash of nutmeg, ½ teaspoon vanilla extract and 1½ cups fresh rinsed or frozen thawed blackberries. Spoon blackberry mixture evenly over the crust.
  • Bake for 30-40 minutes. Cool; cut into 12 bars.

Blackberry sauce:

  • In small bowl stir together 1½ pints fresh rinsed blackberries, 2 tablespoons fresh orange juice and 1 tablespoon honey. Let sit for 15 minutes to blend flavors before serving. To serve, place one bar on a dessert plate. Top with a spoonful of blackberry sauce.
