Preheat oven to 425 degrees.
- Cut 1½ lb. white fish fillets into 1-inch wide strips. In small bowl stir together ¼ cup reduced-fat mayonnaise, ½ teaspoon grated lemon rind, 1 tablespoon fresh lemon juice, and ½ teaspoon sodium-free lemon-pepper seasoning. Brush the mixture on both sides of all fish fillet strips,
- In shallow bowl stir together ¾ cup plain crispy breadcrumbs, 1 teaspoon freshly ground black pepper, and ½ teaspoon garlic powder. Coat both sides of fish in breadcrumb mixture and place on baking sheet that has been coated with vegetable cooking spray. Lightly spray the tops of the fillets with the spray.
- Bake in hot oven for 25 minutes. Serve fish with lemon mayonnaise.
- Stir together 1/3 cup reduced-fat mayonnaise, 1 teaspoon grated lemon rind, 1 teaspoon fresh lemon juice and ½ teaspoon freshly ground black pepper.
