- Heat 1 tablespoon canola oil in large pot. Sauté 1 large chopped onion and 2 minced garlic cloves for 3-5 minutes. Add 1 cup assorted finely chopped fresh vegetables (bell peppers, mushrooms, onions, zucchini, carrots, broccoli, etc.) and sauté for a few more minutes.
- Add ¾ pound crumbled lean ground beef or ground turkey breast (optional – omit to keep this sauce meatless). Cook until no longer pink.
- Add 1 (16-ounce) can tomatoes, 1 (6-ounce) can tomato paste and 1 teaspoon dried oregano. Stir; add additional water to reach desired consistency. Cover and simmer for 1 hour. Serve over whole-wheat or multi-grain spaghetti.
