Baked Sweet Potatoes with Fruit

Preheat oven to 375 degrees.

  • Peel 6 large sweet potatoes and slice. Place in saucepan and cover with water. Bring to a boil. Reduce heat, cover and simmer until fork-tender. Drain sweet potatoes.
  • Place potatoes in a casserole dish coated with vegetable cooking spray. In mixing bowl stir together 2 large diced apples, 1 orange (cut into bite-size pieces), 2 tablespoons fresh lemon juice, 1 tablespoon brown sugar, ½ cup red wine and whole cloves. Pour over the sweet potatoes.
  • Bake uncovered for 30 minutes.

Makes 12 servings.
