- In a container with a tight lid layer the following ingredients from the bottom up: ½ cup rinsed black beans or fat-free refried beans, 2 tablespoons reduced-fat sour cream or plain Greek yogurt, ¼ cup shredded carrots, ¼ cup diced tomatoes, 2 thinly sliced green onions, ¼ cup salsa and ½ cup shredded reduced-fat Mexican cheese blend.
- Pack with baked tortilla chips for dipping or whole-grain pita pocket for stuffing.
