Broccoli Salad

 

  • In mixing bowl stir together 2 cups bite-size fresh broccoli florets, 2 medium grated carrots, 1 medium diced red onion and ½ cup chopped roasted red pepper.
  • In a jar with a lid shake together the dressing ingredients: 4 tablespoons rice vinegar, 2 tablespoons water, 1 tablespoon extra-virgin olive oil, 2 teaspoons honey, 1 teaspoon minced garlic, ½ teaspoon crushed dried basil and ¼ teaspoon black pepper.
  • Pour over the broccoli salad ingredients and gently toss to coat.
  • Refrigerate until serving time.

Makes 4 servings

*Note: Broccoli is an excellent source of potassium and a good source of calcium.
