Banana Bread

Preheat oven to 350 degrees. Coat a loaf pan with cooking spray. Set aside.

  • In a mixing bowl stir together 3-4 mashed bananas (1½ cups), 2 tablespoons canola oil, ¼ cup reduced-fat buttermilk and 4 egg whites.
  • In a large mixing bowl whisk together 1½ cups all-purpose flour, ½ cup dry old-fashioned oats, ½ cup sugar, 2 teaspoons baking powder, 1 teaspoon baking soda and ¼ teaspoon salt.
  • Make a well in the center of the dry ingredients. Pour the liquid ingredients into the well and stir together to combine. Do not over mix or the bread will be tough.
  • Pour into loaf pan and bake for 60 minutes or until a wooden toothpick inserted in the center comes out clean.

Makes 16 slices.

Note: You can also add chopped nuts, pumpkin seed, 3 tablespoons peanut butter or mini chocolate chips for variety.
