- Wash 1 long cucumber; trim ends and slice into 1/3-inch slices.
- In blender process 1 (15-ounce) can drained and rinsed garbanzo beans, 2 green onions, 1 T. olive oil, 1/3 cup fresh lemon juice and ΒΌ teaspoon pepper.
- Process until blended but chunky.
- Dip cucumber slices into the dip or spread onto each slice.
