- In mixing bowl toss together 6 ounces shredded reduced-fat Swiss cheese and 1 Tbsp. flour.
- In saucepan stir together ½ cup nonfat buttermilk and ½ fat-free half & half cream over medium heat.
- Stir cheese-flour mixture slowly into the saucepan, making sure the cheese melts before adding more.
- Stir constantly until all cheese melts.
- Stir in a dash of nutmeg.
- Pour cheese into fondue pot.
- Serve with rustic whole grain bread cubes or raw veggies.
