Cheesy Fondue

  • In mixing bowl toss together 6 ounces shredded reduced-fat Swiss cheese and 1 Tbsp. flour.
  • In saucepan stir together ½ cup nonfat buttermilk and ½ fat-free half & half cream over medium heat.
  • Stir cheese-flour mixture slowly into the saucepan, making sure the cheese melts before adding more.
  • Stir constantly until all cheese melts.
  • Stir in a dash of nutmeg.
  • Pour cheese into fondue pot.
  • Serve with rustic whole grain bread cubes or raw veggies.

Yield: 2 servings
