Breakfast Bran Muffin Trifle

  • Coarsely crumble up bran muffins to equal 3 cups.
  • Place half the muffin crumbs into a glass bowl.
  • Top with 3½ cups of fresh fruit chunks: blueberries, mandarin oranges, raspberries, etc.
  • Cover with the remaining bran chunks.
  • Spoon 2 cups of nonfat or low fat vanilla yogurt evenly over the top.
  • Sprinkle the top with 1 cup of fresh fruit chunks.
  • Cover and refrigerate for at least 6 hours or overnight.

Yield: 6 servings
