What a great time of year for visiting the local orchards to pick healthy, high-fiber apples. When you have a few extra minutes in the morning, be sure to make apple pancakes with the kids. A simple recipe follows below. You can also add chopped apples to muffins, quick breads, and even meatloaf!
Apple Pancake Ingredients
Whisk together 1 cup flour, ¼ cup whole wheat flour, 2 teaspoons baking powder, ½ teaspoon baking soda, ½ teaspoon cinnamon and 1 T. sugar. Add 1 cup nonfat buttermilk, 1 egg or ¼ cup egg substitute and 1-2 T. canola oil. Stir just until combined. Gently stir in ½ cup chopped fresh apples. Makes 6 medium pancakes. (P.S. The salt was omitted from this recipe.)
