Halloween is the perfect occasion to have an ORANGE-fest. When my kids were young, we planned healthy orange- colored meals on Halloween Day.
Pumpkin muffins and fresh orange wedges would start the day. Lunch might be grilled cheddar cheese sandwiches with baby carrots. Dinner was always light because of the trick-or-treating that followed. Stuffed orange bell peppers with a side of cornbread (add 1-2 drops of food coloring to the cornbread batter for a bright orange color) was an easy, yummy dinner.
Orange fruit (peaches, oranges, apricots, nectarines), orange veggies (carrots, sweet potatoes, bell peppers, pumpkin), orange protein (salmon, cheddar cheese).
