vegetable oil cooking spray
1 (18-ounce) box yellow cake - with no trans fat content
1 cup canned pumpkin puree or other baby vegetable
¼ cup water
2 tablespoons vegetable oil
2 large eggs
1 large egg white
6 ounces lemon, banana or vanilla yogurt
- Preheat oven to 350 degrees. Coat an 11x9-inch baking pan with cooking spray; then flour lightly.
- In large mixing bowl, combine the cake mix, pumpkin or baby vegetable, water, oil, eggs, egg white and yogurt. Beat until smooth, 2 minutes.
- Pour batter into cake pan; spread out evenly. Bake until a toothpick inserted into the cake comes out clean, about 25 minutes.
- Makes 16 pieces.
