Southwestern Turkey Shepherd's Pie
1 lb. ground turkey
1½ cups chunky salsa, well-drained
¼ teaspoon chili seasoning powder
2 cups garlic smashed potatoes, made from red skin potatoes skins left on
½ cup shredded low-fat Mexican cheese blend
Preheat oven to 400 degrees. Coat a nonstick skillet with cooking spray. Crumble up the ground turkey into the skillet and brown, stirring frequently. Stir in drained salsa and chili seasoning.
Pour browned ground turkey mixture into baking dish coated with cooking spray. Spread out evenly, and then top evenly with hot mashed potatoes. Sprinkle with cheese.
Bake in oven for 15-20 minutes or until bubbly. Let sit at room temperature for 5 minutes before serving. Makes 4 servings.
