Potato Salad with Green Beans
Ingredients3 medium Yukon Gold potatoes, cut into ½ -inch chunks2 teaspoons cider vinegar1 cup bite-size diagonally-cut green beans¼ cup thinly sliced green onions1/3 cup low-fat mayonnaise1/3 cup low-fat buttermilk¼ teaspoon dried dill1/8 teaspoons black pepperDirections
- Place potatoes in large saucepan and cover with cold water. Cover and bring to a boil; reduce heat and boil gently for 9 minutes or until tender. Drain and transfer to large bowl Add vinegar and toss gently.
- Steam green beans in steamer basket over boiling water for 6 minutes or until crisp-tender. Cool under running water; drain well. Add green beans and onions to potatoes.
- Dressing: Whisk together mayonnaise buttermilk, dill and pepper in medium bowl. Add to vegetables and mix gently to combine. Refrigerate until serving time. Makes 4 servings.
