Mini Cinnamon-Fruit Stack-Ups
4 (4-pieces) frozen whole-grain mini waffles
1 tablespoon sugar
¼ teaspoon ground cinnamon
1 star fruit
2 cups reduced-fat vanilla Greek yogurt
½ cup fresh blueberries
1 cup raspberries or strawberries
1. Toast waffles and separate each into 4 pieces. Arrange 3 pieces on each of 4 plates.
2. Meanwhile, in a small bowl, combine sugar and cinnamon. Cut each kiwifruit crosswise into 6 pieces. Cut star fruit crosswise into 8 pieces.
3. To assemble, sprinkle half of the cinnamon sugar over waffles. Spoon ½ cup yogurt onto each serving. Arrange 3 slices kiwifruit, 2 slices star fruit, 2 tablespoons blueberries and ¼ cup raspberries on each. Angle remaining waffles on side of fruit and sprinkle with remaining cinnamon sugar. Makes 4 servings.
