Broccoli-Cannellini Bean Salad
2 cups lightly steamed and chilled broccoli florets
1 (15-ounce) cannellini beans, rinsed and drained
½ cup finely sliced red onion
1 tablespoon vinegar
¼ teaspoon dried oregano, crushed
1/8 teaspoon salt (optional)
1/8 teaspoon black pepper
2 teaspoons olive oil
- Combine broccoli, beans and red onion in salad bowl Mix gently but well.
- Stir together vinegar, oregano, salt and pepper in small bowl. Stir in oil. Pour over salad mixture. Mix well. Makes 3 servings.
