Yield: 1 burrito
- Scramble 1 egg or ¼ cup egg substitute in skillet coated with vegetable cooking spray.
- Place 1 small multigrain tortilla in microwave and heat for 10 seconds.
- Place cooked scrambled egg in the center of the tortilla.
- Sprinkle with freshly ground black pepper.
- Top with 1 Tbsp. low-fat grated cheese, 2 Tbsp. black beans and 1 Tbsp. low-fat sour cream.
- Roll up and fold in the edges.
- Wrap in foil if this needs to be a breakfast to go!
