Whole-Grain Orzo Pilaf with Peas
Ingredients2 teaspoons extra-virgin olive oil1 cup uncooked whole-grain orzo½ cup diced onion2½ cups water1 cup snow peas, trimmed with strings removed, cut diagonally in thirds1 cup frozen, thawed green peas1 tablespoon fresh sage2 tablespoons grated Parmesan cheese¼ teaspoon black pepperDirections
- Coat large skillet with cooking spray. Add oil and heat over medium high heat. Add orzo and onion; cook, stirring often, 5 minutes or until orzo is golden brown.
- Add water; bring to a boil. Cover; lower heat and simmer 11 minutes or until orzo is tender.
- Add both peas and sage. Stir to combine. Cover and cook 2 minutes or until vegetables are bright green and crisp-tender. Sprinkle with cheese and black pepper; stir to combine. Makes 4 servings.
