White Bean and Sweet Red Pepper Salsa with Pita Wedges
Preheat oven to 350 degrees.

- Cut 3 (6-inch) whole-grain pita pockets into 6 wedges. Place on baking sheet and bake 5 minutes or until they just begin to brown lightly. Cool completely.
- In a medium mixing bowl stir together ½ (15-ounce) can rinsed and drained navy beans, 1 medium finely chopped red bell pepper, 2 tablespoons fresh lemon juice, 1 tablespoon extra virgin olive oil, 1 tablespoon drained capers, ½ teaspoon dried oregano leaves and ½ minced medium garlic clove.
- Serve with pita wedges.
