Warm Spinach Salad Ingredients1 (7-ounce) bag baby spinach greens1 cup mandarin orange slices, drained of juice¼ cup white vinegar¼ cup water or mandarin orange juice2-3 Tablespoons Dijon mustard3 tablespoons Splenda sugar substitute or sugar to taste5 slices turkey bacon¼ cup thinly sliced red onion2 cloves garlic, peeled and minced Directions
- Place spinach green in colander. Wash and remove stems. Drain well and place in serving bowl. Add orange slices and toss.
- In small bowl, blend together the vinegar, water mustard and sugar substitute or sugar. Set aside.
- Slice bacon into small thin strips. Place in medium saucepan and fry over medium-high heat until crispy, about 3 minutes. Add onion and garlic. Cook over medium-high heat for 2 minutes.
- Add vinegar mixture and simmer for 2 minutes. Pour over the salad and toss to coat. Serve immediately. Makes 4 servings.
