1 whole wheat premade pizza crust, such as Boboli
1 tablespoon olive oil
¼ cup broccoli florets
½ red onion, thinly sliced
1 medium yellow bell pepper, cored and thinly sliced
6 cherry tomatoes, halved
½ cup reduced-fat herb cheese spread, like Borsin
½ cup grated reduced-fat mozzarella cheese
½ cup coarsely chopped walnuts
½ cup black olive slices
- Preheat oven to 400 degrees. Coat a pizza pan with cooking spray.
- Heat olive oil in skillet over medium-high heat. Add broccoli, onion, peppers and tomatoes. Sauté gently for a few minutes until slightly tender.
- Evenly spread herb cheese over the pizza crust. Top with sautéed vegetables, walnuts and olives. Top with grated cheese. Drizzle with a flavorful olive oil.
- Bake in hot oven for 10-12 minutes. Let sit at room temperature for 5 minutes before slicing.
