Turkey Zucchini Meatballs
1 egg white
½ cup steel-cut or old-fashioned oats
1 lb. lean ground turkey
1 clove garlic, minced
½ teaspoon black pepper
1/8 teaspoon nutmeg
1 medium zucchini, shredded – about 1 cup
2 cups low-sodium prepared or homemade marinara sauce
3 cups cooked spaghetti
- Preheat oven to 400 degrees. Coat a baking pan with cooking spray.
- In medium bowl stir together the egg whites and oats. Set aside.
- In small bowl mix together turkey, garlic, pepper and nutmeg. Add zucchini and oats, mixing with your hands to evenly distribute the zucchini and seasonings. Form into 24 meatballs and place on baking pan.
- Bake for 12-15 minutes. Once cooked, place meatballs and sauce into medium saucepan. Cover and bring sauce to a boil. Simmer approximately 10 minutes. Serve over spaghetti. Makes 6 servings.
