Makes 4 servings.
- In a small bowl stir together 1 cup chopped mango (fresh or frozen), ¼ cup sugar-free orange maramalde1/4 cup finely diced red bell pepper. 1 tablespoon chopped green onion, 2 tablespoons lime juice and 2 tablespoon chopped fresh cilantro.
- Stir together 1 teaspoon chili powder and ½ teaspoon black pepper Sprinkle on both sides of fish.
- Heat 1 tablespoon olive oil in nonstick skillet. Add 4 (4-ounce) tilapia fish fillets and cook over medium heat for 3- minutes per side. Cook until fish is opaque.
- Serve each fillet with a spoonful of homemade salsa.
