Salmon Burger with Tarragon Sauce
1 (6-ounce) can pink salmon or
leftover cooked salmon
¼ cup dried bread crumbs
1/3 cup chopped green onions
**¼ cup chopped cilantro
2 egg whites
**2 tablespoons lime juice
**1/8 teaspoon ground red pepper
** These 3 ingredients may be irritating if you have Interstitial Cystitis. Any of the three or all can be omitted if needed.
Tarragon Sauce Ingredients
1/3 cup light sour cream
1½ tablespoons reduced-fat
1 tablespoon fat-free milk
½ teaspoon dried tarragon leaves
1/8 teaspoon black pepper
Combine tarragon sauce ingredients in small
bowl. Refrigerate until serving time.
Combine burger ingredients in medium
bowl. Coat a large nonstick skillet with cooking spray. Place over medium heat
until hot. Spoon equal amounts salmon mixture into 4 mounds in skillet. Using a
flat spatula, flatten each mound. Cook 3 minutes per side.
Serve with Tarragon Sauce on a
multigrain bun. Makes 4 servings.
