Pumpkin Spice Drop Cookies
Preheat oven to 375 degrees. Coat baking sheets with cooking spray.
- In bowl whisk together 2¼ cups all-purpose flour, 1½ teaspoons pumpkin pie spice, 1 teaspoon baking powder and ½ teaspoon baking soda.
- In another bowl mix together with electric mixer 1 cup softened no-trans-fat soft margarine and 1 cup granulated white sugar. Mix in 1 (15-ounce) can 100% pure pumpkin, 2 large eggs and 1 teaspoon vanilla extract. Gradually beat in the flour mixture. Stir in 1 cup mini chocolate chips and 1 cup chopped walnuts. Drop by rounded tablespoon onto baking sheet.
- Bake for 10 minutes or until edges are lightly browned. Remove from oven and cook cookies on wire racks. Drizzle with vanilla glaze.
- In small bowl whisk together 1 cup powdered sugar, 1-1½ Tbsp. milk and ½ teaspoon vanilla extract. Mix until smooth.
