Preheat oven to 350 degrees. Coat a 12-count muffin pan with cooking spray and set aside.
Makes 12 muffins.
- In a large bowl whisk together 1½ cups whole wheat flour, ½ cup sugar, 1 teaspoon ground allspice, 1 teaspoon ground nutmeg, ¾ teaspoon baking powder and ½ teaspoon baking soda.
- Add ¾ cup canned 100% pure pumpkin, ¼ cup egg substitutes, ½ cup canola oil, ½ cup honey, ½ cup (thawed) frozen apple juice concentrate, ¼ cup chopped walnuts and ½ cup raisins. Do not over mix.
- Spoon the batter evenly into the 12 muffin cups. Bake for 12 minutes or until a wooden toothpick inserted in the center comes out clean. Cool slightly; remove muffins and let cool on a wire rack.
