Peanut Butter PLUS Cookies
Preheat oven to 375 degrees.
- In large bowl using a mixer, beat together 1¼ cups crunchy peanut butter and 1 cup firmly packed brown sugar. Add 1 large egg or ¼ cup egg substitutes, 2 Tbsp. water and ¼ teaspoon almond extract.
- In another small bowl, whisk together ¾ cup all-purpose white flour and 1 teaspoon baking soda. Add to the peanut butter mixture and blend. Stir in ½ cup semi-sweet mini chocolate chips.
- Drop by spoonfuls onto a baking sheet. Flatten the tops with a fork, making a crisscross pattern on the top. Bake for 8-10 minutes. Remove from oven and let cool before placing on cooking racks.
