Preheat oven to 350 degrees. Coat a large bundt pan with cooking spray.
- In a large mixing bowl stir together 1 (3.5-ounce) package instant vanilla pudding mix, 1 (18.25-ounce) package yellow cake mix, 4 eggs or 2 eggs and ½ cup egg substitutes, ½ cup vegetable oil and 1 cup cold water or orange juice. Mix with an electric mixer on medium speed for 2 minutes. Pour the batter into the bundt pan. Bake for 30 minutes or until a wooden toothpick inserted in the cake comes out clean.
- In a small saucepan combine ½ cup fresh squeezed orange juice, 2 Tbsp. soft tub margarine or butter and 2 Tbsp.granulated sugar. Bring to a boil. Simmer for 2 minutes. Remove the cake from the bundt pan onto a serving plate. Poke holes in the top of the cake with a fork. Pour the orange juice liquid over the cake, letting it seep into the holes in the cake.
