Preheat oven to 325 degrees. Coat a 9-inch square pan with cooking spray.
Makes 12 squares.
- In mixing bowl stir together ½ cup canola oil, ½ cup firmly packed brown sugar and 1 teaspoon vanilla extract. Stir in 2 cups quick-cooking oats, ½ teaspoon baking powder and 1 teaspoon ground cinnamon. Mix until combined.
- Pour mixture into the pan and firmly press into the pan. Bake for 20 minutes or until the edges are golden brown. Cut into squares. Allow to cool in the pan and then transfer into a container with a lid.
