Mediterranean Penne with Tuna
Mediterranean Penne with TunaIngredients6 ounces uncooked whole grain penne pasta1 cup chopped red bell pepper½ cup chopped onion2 medium garlic cloves, minced1 teaspoon dried oregano12 pitted kalamata olive, coarsely chopped1 tablespoon olive oil1 (3-ounce) albacore tuna, rinsed and drained½ cup crumbled feta-cheeseDirections
- Cook pasta according to package directions, omitting any salt or fat.
- Meanwhile coat large nonstick skillet with nonstick cooking spray and heat over medium-high heat. Cook pepper and onion 5-7 minutes or until onion is translucent stirring frequently. Add garlic and oregano; cook 30 seconds, stirring constantly. Remove from heat; add olive and oil.
- Place pasta on serving platter. Top with tuna Spoon vegetables evenly over all and sprinkle evenly with feta cheese. Makes 4 servings.
