Layered Mexican Casserole
Preheat oven to 350 degrees.
- Prepare 1 (10-ounce) package of frozen brown rice according to package directions. Spread the rice evenly in an 8-inch square baking pan. Stir in 1 teaspoon ground cumin. Drizzle the top with 1 tablespoon olive oil. Using the back of a spoon, smooth out the surface.
- Spoon 1 (4-ounce) can chopped undrained green chiles over the top of the rice. Sprinkle evenly over the top in the following order, ending with the cheese: ¼ cup snipped fresh cilantro, 1½ cups cubed cooked skinless chicken breasts and on the top, ½ cup reduced-fat shredded Mexican-blend cheese.
- Cover with foil and bake for 15 minutes. Serve with wedges of lime.
