1 (15-ounce) can chickpeas, rinsed
2 tablespoons tahini (optional)
2 tablespoons fresh lemon juice
1 clove garlic
1 tomato, finely chopped
2 green onions, finely chopped
2 tablespoons chopped fresh parsley
Assorted vegetables for dipping
Corn chips for dipping
- In food processor, combine chickpeas, tahini, lemon juice, and garlic. Process until smooth.
- Combine tomatoes, onions and parsley in small bowl.
- Place chickpea mixture in medium bowl. Top with tomato mixture.
- Serve with raw vegetables, rice crackers or corn chips.
